Creamy Asparagus Soup From Grandma’s Recipe

Grandma had the perfect recipe for two kinds of soup: one was for healing, soothing soup that we ate when we were sick and that made us feel fit again with every spoonful.
On the other hand, for soup that was as delicious and filling as a serving of potatoes with Sunday roast. To the latter category belongs the asparagus soup recipe that we would like to reveal to you today.

What you need

2 lb green asparagus
3 onions
20 fl.oz. water
2 tablespoons sugar
2 tablespoons salt
3.5 oz butter
2 tablespoons flour
6 fl.oz. white wine
6 fl.oz. cream
chives (for garnish)
white pepper
salt

And here’s how!

Cut off the ends of the asparagus, peel it and cook it with plenty of salt; set aside.

Melt the butter in a saucepan, add the sliced onions and add the flour and then the white wine to the simmering broth.

Now cut the asparagus and add it to the pot.

Add salt and pepper and then stir in the cream.

Chop the asparagus with a hand blender and mix everything well.

Serve with some chives.
