This Will Be Your New Favorite Cake: Cinnamon And apple!

There are certain classic cakes that we all loved as children: Marble cake, strawberry cake or apple pie, for example. We have come to love the recipes from back then so much that we wouldn’t think of modifying them. In fact, sometimes only small changes are needed to add new finesse to our beloved classics. As, for example, with this sophisticated apple pie variation….

This is what you need

For the cinnamon crumble.

7 oz flour
4 oz brown sugar
2 oz granulated sugar
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
2 oz butter
1/2 teaspoon vanilla
2 small apples, peeled and diced

For the cake.

4 tablespoons butter
4 oz granulated sugar
1 large egg
1 teaspoon vanilla
3 oz sour cream
4 oz flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon baking powder

Cider glaze

2 oz powdered sugar
2 tablespoons apple cider

And so it goes

Preheat the oven to 350 degrees, grease a medium springform pan and line the bottom with baking paper.

For the cinnamon crumble, first mix the dry ingredients in a bowl. Then add the melted butter and vanilla and stir until the mixture is evenly moistened. Set aside.

For the cake batter, in a large bowl, cream 4 tablespoons of butter with the sugar until fluffy, then add the egg and beat well. Finally, add the vanilla and sour cream and continue beating.

In another bowl, mix the flour, baking powder, salt and baking soda and stir into the butter mixture until everything is well blended.

Spread half of the batter thinly on the bottom of the pan, then scatter the apple pieces evenly over the batter, top with a portion of the cinnamon sprinkles.

Spread the remaining batter on top of the crumble and sprinkle the rest of the cinnamon crumble on top.

Bake for 35-40 minutes.

For the glaze, whisk powdered sugar with apple cider and drizzle over the cake.
