Warm Potato Salad Just Like Grandma Used To Make It

Our grandmas really were the best when it came to creating a variety of wonderful dishes from a plain sack of potatoes. One that was on the table not just for one lunch, but for days without us ever getting tired of it, was potato salad! And although we loved to eat it cold too – it was still best warm.

The secret of a potato salad like grandma used to make is the fine tuning of the flavors, because it must neither be too sour nor become “watery”. With our recipe, you’re guaranteed to succeed!

What you need

2 lb. of potatoes, quartered
6 slices of bacon
1 red onion, finely diced
6 tablespoons apple cider vinegar
3 tablespoons water
2 tablespoons olive oil
2 tablespoons Dijon mustard
1 teaspoon granulated sugar
Salt
Black pepper
4 scallions, cut into slices

And here’s how!

Wash the potatoes, quarter them unpeeled and boil them.

Chop the onions, then fry the bacon until crispy and set aside.

Add the onions to the hot pan and fry them.

Add water, oil and vinegar, then stir mustard, salt, sugar and the pepper into the vinaigrette, finally add the scallions to the pan.

Mix the potatoes, bacon and vinaigrette well in a large bowl and serve immediately.
