You’ll Want These Cookies Again And Again: Toffifee Fairy Kisses!

There are quite a few people who claim that Toffifee is the perfect candy. They’re not as airy and (way too) light as pralines, but they’re also not as tough on the stomach as a whole candy bar. It’s hard to believe that Toffifee could be improved upon on any level. But after years of research in the food lab, we can announce: Yes, it is possible! We have pimped Toffiffee – and show you how it works here…

What you need

For the dough
1 oz cocoa
1 oz sugar
3 oz flour
A pinch of salt
2,5 oz butter

For the topping
5 oz sugar
1/4 tsp cornstarch
20-22 Toffifee
2 egg whites
A pinch of salt

And here’s how

Prepare the dough

Mix well the cocoa powder with the flour, sugar and a pinch of salt.

Piece by piece, add the butter and knead the dough until smooth, then chill in the refrigerator for about an hour.

Prepare the topping

Beat the egg whites with a little salt until foamy.

Slowly add the sugar and beat the mixture until stiff.

Sift the cornstarch and stir it in.

Pour the finished mixture into a spout and chill.

Garnish

Roll out the dough and cut out small circles, then place a Toffiffee on each piece of dough, chocolate side down.

Now pipe a meringue mound on each piece of Toffifee dough with the spout.

Bake for about 20 minutes at 300 degrees.
