A True Classic: The Perfect Golden Brown Roast Chicken!

Of the many delicacies Grandma served up for Sunday dinner back in the day, roast chicken was the most terrific! As soon as we walked in, the intense, spicy aroma told us that crispy golden brown chicken was about to be served – add potatoes with gravy, and the feast was perfect. This is what you need

1 roast chicken
1 tablespoon canola oil
1/2 tsp salt
1/2 tsp pepper
6 carrots
4 stalks of celery
3 baked potatoes
2 onions
2 tablespoons butter
4 tsp. fresh thyme

And here’s how

Preheat the oven to 375 degrees. Place the chicken in a roasting pan, rub with oil, then sprinkle with 1/4 teaspoon salt and 1/4 teaspoon pepper and bake for an hour.

Arrange the carrots, celery, potatoes and onions around the chicken. Melt the butter and stir in the thyme, then drizzle the mixture over the chicken and vegetables. Sprinkle with the remaining 1/4 teaspoon salt and 1/4 teaspoon pepper.

Cover and bake until a thermometer inserted into the thickest part of the thigh reads 175 degrees and the vegetables are tender (about 30 minutes).
