Super Tasty Cabbage Rolls Like Grandma’s!
Something you surely remember if you come from a family of German descent… Among the many delicious things that used to be served on Grandma’s dinner table at weekends, there was one that we were not at all enthusiastic about: cabbage rolls. What philistines we were! From our adult point of view, cabbage rolls are, of course, a treat. And the perfect way to annoy your nieces or nephews when they come to visit….
We have a great recipe for you: German cabbage rolls, just like grandma used to make!
What you need
For the cabbage:
1 (1 1/2-pound) head cabbage
1 to 2 teaspoons salt
For the filling:
1 pound ground beef
1 large egg
1/3 cup breadcrumbs
1/2 teaspoon paprika
1/2 teaspoon dried marjoram
3/4 teaspoon salt
Freshly ground black pepper, to taste
For the cabbage rolls:
1 to 2 strips bacon
1 cup beef broth
For the sauce:
1 tablespoon cornstarch
1/4 cup water
And here’s how!
Remove wilted leaves from the cabbage head and boil in a large pot of water for 8 to 10 minutes.
Peel off the cabbage leaves and cut off the hard stalk to make them easier to roll. You’ll need 10 to 12 leaves – plus a few spare leaves in case one breaks while rolling.
Mix the ground meat with the egg, bread crumbs, paprika, marjoram, salt and bell pepper.
Form meat rolls according to the number of cabbage leaves; place each on a leaf and roll up.
Tie each roll with kitchen twine.
Cut the bacon into small pieces and fry over medium heat for about 6 minutes; set aside.
Sauté the cabbage rolls in the bacon grease on the top and bottom, about 6 minutes total.
Transfer everything to a roasting pan, add the beef broth and simmer for 40 to 50 minutes.
For the sauce:
Remove the cabbage rolls from the roaster.
In a small bowl, mix the cornstarch with 1/4 cup of water, gradually add to the broth in the pot and bring to a boil, stirring constantly, until everything thickens.
Pour the sauce over the cabbage rolls, garnish with the bacon pieces.
