Homemade Chicken Fricassee Like From Mom

As kids, rice wasn’t exactly the most popular culinary option for us – especially compared to all-time favorites like mashed potatoes or French fries! However, certain combinations made our mouths water. Chicken fricassee is one such example: with creamy gravy and soft chicken meat, rice was a whole different ballgame….

Today we have a recipe for you, which makes the chicken fricassee tastes like back at home!

What you need

2 ½ tablespoons butter
1 onion
¼ cup all-purpose flour
1 ½ cups chicken broth
½ cup heavy cream
1 pound chicken breast
1 bay leaf
1 cup carrots
1 cup white mushrooms
1 cup peas
1 ½ teaspoons lemon juice
salt and pepper

And here’s is how

Preheat the butter in a saucepan over medium heat. Then sauté the onion until it becomes translucent.

Stir in the flour. Pour the chicken broth and cream into the pot, stirring constantly, until the mixture is smooth and the sauce begins to simmer.

Now add the chicken breast and bay leaf, simmer for 10 minutes, then add the carrots, mushrooms and peas.

Simmer the chicken fricassee for another 10 minutes.

Remove the chicken meat and cut it into bite-sized pieces, then return it to the pot.

Remove the bay leaf, add the lemon juice and season the chicken fricassee with salt and pepper.
