Your Kids Will Love Them: Delicious “Überraschungseier” Boats!
10.06.2022 15:11 UhrWhen it came to our favorite candy in the past, we were separated by divides that could almost be called ideological. Which was better, Snickers or Milky Way, Skittles or M&M’s? For many people in Germany, “Überraschungseier” were (and still are) at the top of the candy hit list. And not only because of the toys inside… Our pimped “Ü-Eier”, however, will convince even the heretics, because this refined treat could also be served at the posh atelier soiree! We’ll show you how to make them.
This is what you need
3 “Ü-Eier”
3 eggs
4 oz powdered sugar
1 jar of almond paste
1 jar of agar agar
3 oz water
2,5 oz ground hazelnuts
strawberries or wafers for the “sails”
To taste: salt, spirulina, vanilla sugar, cinnamon, gold leaf.
And here’s how!
For the meringue:
Beat the eggs, separate the egg whites and beat until foamy.
Fold in the powdered sugar and a pinch of salt and spirulina (for color).
Pour into a piping bag and portion on a baking sheet.
Dry in an open oven at 149 degrees for three hours.
For the nut cream:
Boil one glass each of almond paste and agar agar with 3 oz of water in a saucepan; season with vanilla sugar and cinnamon.
Mix in the ground hazelnuts.
To serve:
Place the half Ü eggs on the meringues and fill with the nut cream, then decorate with the sails (halved strawberry/waffles) and edible gold leaf.
