Your Kids Will Love Them: Delicious “Überraschungseier” Boats!

When it came to our favorite candy in the past, we were separated by divides that could almost be called ideological. Which was better, Snickers or Milky Way, Skittles or M&M’s? For many people in Germany, “Überraschungseier” were (and still are) at the top of the candy hit list. And not only because of the toys inside… Our pimped “Ü-Eier”, however, will convince even the heretics, because this refined treat could also be served at the posh atelier soiree! We’ll show you how to make them.

This is what you need

3 “Ü-Eier”
3 eggs
4 oz powdered sugar
1 jar of almond paste
1 jar of agar agar
3 oz water
2,5 oz ground hazelnuts
strawberries or wafers for the “sails”
To taste: salt, spirulina, vanilla sugar, cinnamon, gold leaf.

And here’s how!

For the meringue:

Beat the eggs, separate the egg whites and beat until foamy.

Fold in the powdered sugar and a pinch of salt and spirulina (for color).

Pour into a piping bag and portion on a baking sheet.

Dry in an open oven at 149 degrees for three hours.

For the nut cream:

Boil one glass each of almond paste and agar agar with 3 oz of water in a saucepan; season with vanilla sugar and cinnamon.

Mix in the ground hazelnuts.

To serve:

Place the half Ü eggs on the meringues and fill with the nut cream, then decorate with the sails (halved strawberry/waffles) and edible gold leaf.
